This recipe can look Dutch baby-ish as it’s cooking and it’s all in the placement of the whipped egg(s) onto a hot surface.

Due to the whipped preparation and finished cooked product, food—like a burnt out employee— “wears a lot of different hats”.

I’m used to the simple and sweet breakfast style huevo en torta which only requires an egg, honey, butter or oil and a frying pan.

To make a sweet omelette, cook a large, flat, plain omelette like you normally would for a picky eater’s first introduction to an omelette. Lastly, drizzle honey over the top. I like thin zigzags that run into each other as the honey melts over the warm egg. A spiral will do just fine. Other designs run the risk of oversweetening the huevo en torta, but please, never limit your creativity.

Preheat a flat stovetop pan with butter or oil.

Optional: seasonings to taste, ingredients for a filling

Recommended seasonings include salt & pepper, paprika, garlic & onion powder, Adobo, idk snoop around your spice cabinet.

Recommended fillings for a savory huevo en torta: diced tomatoes, chopped serranos, sliced onion, shredded carrot, meat or meat substitute of your choice (I highly recommend a soyrizo!).

Directions

You start by hand whipping the eggs (I use two full eggs for an individual portion) until the mixture is frothy.

As soon as the egg mixture has been thoroughly whipped, place the egg onto the HOT, preheated skillet.

Allow one side of the huevo en torta to cook, adding any savory ingredients here before you flip the egg.

I choose to add the sweetening syrup at the very end to avoid a sticky pan.

After the second side is done cooking, you can drizzle the honey over your egg before or after serving it on a plate. Really depends on your clean-up preference and how much honey you want to melt in on its own before your mouthfuls.
